Smoked Fish Dip


6 oz smoked fish, flaked

1/2 cup cream cheese

2 Tbsp red onion, finely chopped

3 Tbsp celery, finely chopped

1/4 cup fresh jalapeno, finely chopped (without seeds)

1/4 cup cheddar cheese, grated

1/4 tsp cracked pepper

Fresh parsley, chopped for garnish (optional)



Mix all ingredients together until blended. 

Garnish with parsley, if desired.

Refrigerate for 1 hour, then serve with crackers.



This may seem like a lot of jalapeno peppers, but as long as you leave the seeds out, it adds a bit of flavour without adding too much heat.
